Kathleen reported that Mission Caseras tortillas are on sale for $1.29 at King Soopers! That’s about as low as they go outside of a big one-day or weekend sale. You can sign up to print a coupon to save 55¢ off one package of Mission corn or flour tortillas, which, when doubled at King Soopers, would bring that price down to 29¢!
One of our favorite things to do with flour tortillas is make pizzas with them. It may sound a little weird – aren’t tortillas only for Mexican food?! – but it’s really a great tasting thin-crust pizza that’s super fun and easy for a weekday lunch. As you can see, my kiddos love to make and eat them!
Here’s how to make tortilla pizzas:

You will need…
Mission tortillas – I like to use their Caseras tortillas, but any size and flavor will work. Make sure to choose a size that will fit in whatever pan or griddle you plan to use
Pizza sauce
Mozzarella cheese
Pepperoni or other desired toppings
Cooking spray
1. Preheat a skillet or electric griddle to medium heat.
2. Take a couple of tablespoons of pizza sauce and spread it on your first tortilla. Since these are super-thin “crusts”, you won’t want to use much sauce.
3. Add your desired toppings – pepperoni is a must in our house, but you could really put on anything you’d put on a pizza with a bread crust. The tortillas are thin, but sturdy, so these pizzas can hold several toppings and there’s no stretchy dough to work with.
4. Sprinkle with cheese – the more the better!
5. Spray your pan or griddle with a light coating of cooking spray. Place your tortilla pizza in, cover it with a lid, and cook for about 3 minutes, until the cheese is melted.
6. Cut into pieces and serve ‘em up! This is about as fast of a hot lunch as you can make, and the pan barely even gets dirty!

Another great idea is mexican pizzas, just put a little refried beans on the tortilla and top with cheese and salsa or green chilis and bake, yummy.

I LOVE these! I broil them in the oven and then fold them up in thirds to eat. I’ll have to try them on the stove next time.

We make these too! When I have a piece of chicken left over, we make barbecue chicken pizzas with barbecue sauce, mozzarella and cheddar (truthfully, whatever is available), cubed cooked chicken, red onion, and if I have some out, a little bacon. This and a salad is an easy meal. :)

When Carrie reffered to your site awhile back, I tried your BBQ pizza idea. I loved your Blog too. They are a family favorite now! Growing up my mom let us make pizzas on english muffins, very yummy too. Sometimes when I just have a lot of left over odds and ends I get everything out on the table and let the boys have fun loading up their pizzas. It’s a good way to use up leftovers.
These are one of our favs too! I’ve never done it on the stove either – when I’m really in a hurry, they pop right into the toaster oven!

I am stocking up on the Mission tortillas at KS this week (25 cents with the insert coupons from Sunday!). What is the best way to freeze them so they don’t get freezer burn or don’t get soggy when you thaw them?

Kathy, I don’t know about freezer burn (besides just sealing them in a plastic bag and doing your best to get all the air out), but I have found it is very important to let them defrost in the refrigerator so they don’t get soggy.
I found that using my Food Saver and freezing tortillas in batches of 6 works best. I usually buy a big pack of tortillas at Costco and there is no way we can go through that many in a week! After they thaw in the fridge for a day or so, I heat them up in a nonstick pan – just enough to warm the tortilla with out toasting it – when we use them for tacos.
I am so glad you mentioned the foodsaver. I have one but I don’t use it very much. The bags are so expensive, and I haven’t bothered to figure out if it pretty much negates the fact that I bought the food really cheap when I put them in expensive foodsaver bags. Does anyone have an opinion on that?
For us it has been a money saver because we’ll buy the huge bags of veggies at Costco or load up when they are on sale (fresh or frozen) and then freeze them in smaller batches. Same for meat and anything my husband has gotten through hunting or fishing. Unlike with regular freezer bags, having all of the air out of the bags keeps the food for a really long time without freezer burn. And since you can customize the size of the bag based on the portion you desire, you can really stretch how far the bags will go. I also use them for my make ahead freezer meals and for storing leftover turkey (right now our fam has two adults, one toddler, and one on the way, so we don’t eat a whole lot each meal!). As for the expense of the bags, we get the variety box that comes with two large sized bags and two smaller ones as well as the ones that can be steamed in the microwave – like for veggies and they last us a very long time.
