we lived in Ecuador, South America as missionaries for 13 years (until 10 years ago) and Queso Fresco (fresh cheese) was a staple in most households. What I remember it used for most was llapingachos (a type of small potato pancake filled with gooey, melted queso fresco); locro de papas (potato soup with queso fresco chunks in it half melted and gooey) and sopa de quinoa (quinoa soup with queso fresco and avocado in it – quinoa is a grain grown only in the Andes mountains and is a complete protein!) All these recipes can be found on line and all ingredients can be found here. These are all yummy recipes if you feel like experimenting! My 4 kids (who were born in Ecuador) really miss Ecuadorian food – it is wonderful!
