What To Make With What’s On Sale: Ground Chicken and Turkey

Time for What To Make With What’s On Sale! Let’s get to work pulling together what’s on sale in Colorado Springs with what’s in our pantries from previous weeks, and plan meals for our families that maximize those sales.

This week I thought we’d take a look at a deal that’s going on at Sunflower Market: both ground chicken and ground turkey are on sale for $1.97/lb.  It’s not the absolute best price we’ve seen, but it’s a pretty good one, and as one reader commented, we haven’t seen a whole lot of great meat sales lately!

We are beef eaters – Jeremy would probably faint dead away if I dared to put a turkey burger in front of him.  (I wouldn’t enjoy it, either!)  So, I looked for recipes where ground chicken or ground turkey would be a “star ingredient”, not a substitute for beef.

I didn’t find a ton of recipes that met my criteria, but I did find some that sound delicious!

Chicken Parmesan Sliders
I sent out a tweet asking for recipes that used ground chicken as a “star” ingredient and local reader Val replied with one of her favorites.  (By the way, highly recommend the use of panko bread crumbs in any Chicken Parmesan recipe.)

Chicken Potstickers
We’ve been on a potstickers kick for awhile – they are super easy to make, and I’ve had great success with making the potstickers and then freeze in a single layer and cook as directed (no need to thaw, just a little longer cooking time).  I think they’d be great with ground chicken, but would recommended making a dipping sauce of soy sauce, chile sauce (or Tabasco), a splash or rice wine vinegar, and some sesame oil.

Murgh Keema (Ground Chicken Curry)
I haven’t tried this recipe, but the author starts out by saying he “usually has trouble with Indian dishes” but that this one is the exception.  And, it only has 11 ingredients (all recognizable, though some of us probably don’t have turmeric in our pantries).

Pad Kee Mao (Spicy Ground Chicken and Rice Noodles)
I know, another Asian recipe – this seems to be the only cuisine where ground chicken is “native”?  I’m sure you could substitute fettuccine instead of rice noodles.

Zippy Turkey Tortilla Bake
My friend Amy says that this Zippy Turkey Tortilla Bake recipe is great – but I’m suspicious that it is supposed to be a “Look!  It tastes just like beef!” recipe. ;)

I haven’t bought ground chicken, but last week I got some of Sunflower Market’s chicken sausage, and we’ve enjoyed their Hot Italian Chicken Sausage in calzones, and their Cajun Chicken Sausage is awesome in gumbo.

What do you do with ground chicken and ground turkey? Feel free to share your recipes where it’s a substitute for beef – I’ll just be substituting beef for the poultry! ;)

  1. We’re picky about what recipes we’ll substitute ground turkey for ground beef; I think turkey meatloaf or burgers just aren’t good, but ground turkey sloppy joes or tacos are fine.
    Here’s a good recipe for Sweet ‘n Sour Turkey Meatballs (although I’ll admit that I usually substitute beef when I make this!). Serve them over mashed potatoes.

  5. my husband’s favorite meat to put in spaghetti sauce is Jennio Italian seasoned ground turkey. It’s bogo at Safeway this week, but still not cheap. Maybe I’ll have to get some regular ground turkey at Sunflower and experiment with the italian seasoning part of it… my family actually prefers ground turkey/chicken over beef so I routinely substitute it in anything that calls for beef!

  7. Was just looking through the grocery ads and saw that King Soopers has ground turkey for $1.79/lb this week – sold in a 3-lb “chub”, I think.

    Dan, Dan Noodle Recipe –Jessica McGarvey
    Ingredients:Servings:
    Multiply these ingredients by the number of people you are serving!

    Sauce Ingredients
    2 ounces soy sauce
    1 ounce cooking wine
    1 teaspoon oyster sauce
    1 teaspoon sugar
    7 ounces chicken stock

    Ingredients
    1 teaspoon oil
    1/2 teaspoon chili paste
    1/2 teaspoon minced garlic
    1/4 ounce minced green onion
    4 ounces cooked ground chicken
    14 ounces cooked egg noodles
    cornstarch

    Garnish
    bean sprouts
    julienne cucumber
    Change Measurements: US | Metric
    Directions:Prep Time: 15 minsTotal Time: 25 mins
    1Combine all sauce ingredients and set aside. 2Heat wok. Add one teaspoons of oil. Sear chili paste, garlic, and minced green onion for 5 seconds to release flavors. 3Add cooked ground chicken and sear, stirring and tossing for 5 to 10 seconds. 4Add sauce mixture and simmer for 20 seconds. Add egg noodles to boiling water and heat for 5 to 10 seconds. Remove noodles from water and place in strainer. Move to serving plate. 5Thicken chicken and sauce with a mixture of corn starch and water (equal parts). Consistency should be a very thick sauce to stand on top of the noodles. Pour over center of noodles. 6Garnish with bean sprouts and julienne cucumbers.

    If this recipe is hard to read just google Dan Dan noodles Recipe and you will be able to find it pretty easily. It says it serves 4 but I think the proportions are only for one. I quadruple the recipe.

    We have been making this for years and it is hands down our favorite pasta sauce recipe. I usually double the batch and my family of 2.5 gets about 6 meals out of it. We freeze it after it is cooked in 2-3c. containers for easy weeknight dinners later on.

  10. Just looked over the curry recipe – looks great. I’ll be substituting curry powder for the tumeric, since tumeric is in curry powder. Side note … tumeric is a great weight loss aid!
