What To Make With What’s On Sale: Fresh Broccoli

It’s Friday: time for What To Make With What’s On SaleOrganic broccoli is $0.99/lb this week at Sunflower Market.  If you happened to stop by Rancho Liborio yesterday, you may have bought broccoli for just $0.49/lb.

I have to admit, I don’t buy broccoli often because I don’t personally love the taste.  But there are so many different ways to prepare and serve broccoli, I really don’t have an excuse (and it’s just so nutritious!).

Here are five fresh ideas for using broccoli that hopefully will inspire you to make this superfood a regular on your menu!

Parmesan-Roasted Broccoli from Ina Garten looks easy and yummy; if you want to make it even simpler, try omitting the pine nuts and/or basil.

This Broccoli Slaw recipe is a great summer side dish.  It calls for just a half-cup of mayonnaise (compared to one cup or more in most slaw recipes!)  It’s also easily modified depending on the tastes of your family.

This Cheesy Bacon Broccoli Salad is a delicious and hearty side dish that’s also perfect for summer meals since it’s refrigerated prior to serving.  Seriously, who can resist broccoli when it’s covered in cheese and bacon? :)

If you need a crowd-pleasing appetizer that doesn’t require a lot of time, try these Broccoli Squares.  Pastries are topped with a cream cheese spread, Cheddar cheese, tomatoes, and fresh broccoli.

  1. We don’t mind broccoli as long as I cook it right (have been having issues overcooking or undercooking it lately!), but Jeremy isn’t a huge fan of the stalks. Someone brought an Asian broccoli slaw for dinner one night and we loved it and I realized the “broccoli slaw” that it used (packaged by Fresh Express) would be super simple to make myself!

    So, now I actually like when broccoli bunches go on sale, instead of crowns, because I have something tasty to do with the stalks. :) Here’s the recipe I use for the dressing: http://allrecipes.com/recipe/chinese-broccoli-slaw/detail.aspx

    That broccoli slaw recipe from The Kitchn is a staple of mine; it’s fantastic! And such a nice change from your standard store-bought sides. I’ve also made the parmesan roasted broccoli from Ina Garten. It’s yummy, too. Grating the parmesan w/ a Microplane really helps it melt into the pieces of broccoli.

    My mom always peeled the tough skin from the stalks of the broccoli and that helps a lot with the texture and flavor. Now it’s my favorite part!

  3. I was lucky enough to have Abby and her family over for lunch on Sunday and she brought the Cheesy Bacon Broccoli Salad – I can vouch that it was delicious! Definitely a nice way to eat raw broccoli. :)
