What To Make With What’s On Sale: Mayonnaise

It’s time for What To Make With What’s On Sale!  Memorial Day is almost here, and that means sale prices on condiments!  If you didn’t get any $1.49 Kraft mayonnaise at Safeway last week, there are more good sales on mayo this week.  Safeway has Hellmann’s or Best Foods mayo for $1.77 (after coupon), and King Soopers has the same for $1.99 after coupon.

Mayonnaise is a popular spread for sandwiches; it’s the base for lots of chilled salads, and it’s even included as an ingredient in some baked goods.  Here are six recipes that use mayonnaise!

This Fresh Broccoli Salad is a classic dish for a picnic or potluck.  Try tweaking it to suit your tastes — halved grapes instead of raisins, or sunflower seeds in place of almonds.  Be sure to let it chill overnight so the flavors can meld!

Here’s a super simple recipe, Honey Mustard Dressing, that’s perfect for green salads, as a glaze for grilled chicken or fish, or as a dip for chicken fingers.

This colorful Cornbread Salad is another dish that’s always a hit at summer get-togethers.  It’s a great complement to grilled burgers!

And if you want to add a special kick to those burgers, try Bobby Flay’s 5-star Chipotle Mayonnaise!

    Here’s one I just tried for the first time recently. It’s probably not very healthy for you (but mayo isn’t really a health food, anyhow), but it is yummy (and doesn’t taste like mayo, surprisingly.)

    Parmesan Chicken
    3 chicken breasts
    ½ cup mayonnaise
    ¼ cup parmesan cheese
    Italian bread crumbs
    Combine mayo and cheese. Spread evenly on each chicken breast. Sprinkle with bread crumbs (I like Progresso Italian bread crumbs in baking aisle). Bake at 425 degrees for 25 min.

  2. I go through a lot of mayo making this jalapeño popper dip – it’s delicious! It’s a hit at parties and I often just make it for us to munch on at home.
