It’s that time of the year for all things pumpkin! Sprouts has organic canned pumpkin (15 oz) for $1.00 in their 72-hour weekend sale, and King Soopers also has a decent deal on Kroger canned pumpkin (15 oz) for $1.29.
I put together a canned pumpkin post for What To Make With What’s On Sale last year, but there are so many good pumpkin recipes out there I just had to add to the list. Here are eight more recipe ideas for canned pumpkin:
This Pumpkin Pie Baked Oatmeal has been a frequent breakfast item at our house over the last couple of weeks. My kids love it so much I’ve had to start making a double batch!
Here’s another recipe that would work for breakfast, lunch, or a snack: The Pioneer Woman’s Pumpkin Smoothie. (She uses pumpkin pie mix, but you can use plain canned pumpkin and add a little extra sugar and spices.) If you want a slightly healthier version, try this Pumpkin Gingerbread Smoothie.
Pumpkin goes well in some savory dishes, too, like Rachael Ray’s Pasta with Pumpkin and Sausage. I plan to try this soon and see if my family can guess the “secret” ingredient of pumpkin! (Several reviewers suggest using the entire cans of pumpkin and chicken broth to make the dish saucier and avoid wasting the leftover ingredients.)
Here’s another savory 5-star pumpkin recipe, Pork and Pumpkin Chili. It calls for cubed pork shoulder, but almost any type of pork would work. Try serving it over rice or with a crusty bread.
