Well, we’ve been struck with a flu bug so that has hurt – or helped – my meal planning this week! When you’re sick, you don’t each much, so while I’ll try to stick to this plan, it will likely be whatever anyone feels like eating. Here’s what’s on our menu:
PB&J Sandwiches or Rollups
Potato Sausage Soup, Caesar Salad
Sichuan Green Beans with Rice
Dan Dan Noodles with Bean Sprouts
BBQ Chicken, Baked Potatoes with Chives
Baked Beans (for potluck)
Stir Fried Chicken and Bok Choy with Rice
I also have peaches, canteloupe, and apples on hand for more fruits and veggies, though I’ll admit with the sickness we’ve having, none of that sounds too appetizing right now!
I feel like I’ve been a week behind on menu planning – many of the ingredients I’m using this week are ones I bought on sale last week. I’m also using some meat from the freezer. Most of my grocery budget this week will be spent stocking up on non-perishables and freezer goods at King Soopers, Safeway, and Albies – assuming I feel good enough to get out to the store!
