If you are the friend and blog reader whom we’ve invited over to lunch tomorrow, you may not want to read that I haven’t been to the grocery store all month. So far I’m rockin’ my $40/week goal, but I’m starting to feel it. We need produce, milk, baby wipes, and those deals at Safeway are really tempting me this week. I’m trying to decide which store to go to, but have a feeling I may have to go to two because of what’s on my list and what’s on sale where!
Here’s approximately what we’ve eaten so far in January:
Breakfast
oatmeal w/ cinnamon and brown sugar
cold cereal
Lunches
leftovers
tortilla pizzas
Suppers
Brown Sugar and Mustard Glazed Salmon x2, Better-Than-Grilled Zucchini
Chili, Baked Potatoes
Porcupine Meatballs, Baked Potatoes, Frozen Peas
Stir Fried Chicken and Bok Choy with Crispy Noodle Cake – minus the bok choy, add zucchini ’cause that’s what I had
Homemade Taquitos (recipe experiment that didn’t turn out that great), Guacamole
Beef Enchiladas with Homemade Refried Beans and Guacamole – yes, we ate enough avocados to count for a veggie and then some
Smoked Sausage, Fried Potatoes, Frozen Peas
Uhhh… well, clearly we’ve eaten a couple more meals, but they’re a little fuzzy now. There were a few lackluster attempts I put forth last week during the Head Cold of the Century. We’ve also eaten pears, clementines, Jell-O, peanut butter cookies, apples, popcorn, ice cream, brownies for dessert and snacks.
We haven’t eaten out, with the exception of $2.62 that I spent at Chick-Fil-A on Wednesday morning and whatever Jeremy spent on lunches this week – usually just a few dollars 4-5 times a week.
So, overall, I’m pretty pleased with our first week and a half of the Eat From The Pantry Challenge, but there’s still a long ways to go, and I’m running low on staples like potatoes and hoison sauce (yes, that’s a staple when I planned on cooking a lot of Asian this month)!
