When I have chicken breast on hand, one of my favorite recipes to make is Chicken Parmesan. This yummy version uses panko-style bread crumbs–found at Asian markets or in the specialty section of most grocery stores–which gives the parmesan breading the perfect light texture.

(The recipe calls for hoisin sauce, which can be found in the specialty section of most grocery stores, as well as Asian markets. If you’re not familiar with hoisin sauce or don’t want to bother with finding it, try replacing the hoisin with a little extra soy sauce, brown sugar, and a dash of red pepper.)
