Ah… I have been waiting for Hatch chile season for a couple of months now.  In fact, yesterday I cooked part of the filling for chicken enchiladas and put it in the freezer so that as soon as Hatch chiles were available, I would be ready to make Pioneer Woman’s Chicken Enchiladas!  I have the feeling we’ll be seeing a What To Make With What’s On Sale for Hatch chiles from Abby soon!
