Red bell peppers are sweeter and more flavorful than their green counterpart, and they contain about twice the amount of vitamin C!

Here are some tasty ideas for using and preserving red bell peppers.

Roasting red peppers is a great way to enhance their flavor, as well as to prepare them for preservation in oil.  Ina Garten’s Roasted Red Pepper recipe is easy and only requires two ingredients: bell peppers and olive oil!  (Extra virgin olive oil is also a great price at Sunflower Market this week: $5.99 for 33.8 oz!)

This Marinated Roasted Red Bell Peppers recipe adds vinegar, lemon juice, and seasonings to the olive oil, and it’s great if you’d like to can your roasted peppers.  The recipe includes instructions for both canning and short-term refrigerator storage.

Roasted red peppers are a delicious addition to sandwiches or pasta salads.  They also make a pretty topping on this Pesto Torta (only 3 ingredients!), which is a layered spread to be served with crackers or bread.

Stuffed red bell peppers are a tasty and nutritious main dish.  There are countless versions of stuffed bell peppers out there, but here is a classic recipe, Dad’s Stuffed Bell Peppers, which uses basic ingredients such as ground beef, rice, and canned tomatoes.

Red bell peppers are a perfect complement to the sausage in this recipe, Italian Sausage, Peppers, & Onions.  Try serving it on a hoagie roll or over rice.

Bell peppers are also great for slicing and serving on a veggie tray with your favorite dip, or adding to a meat and vegetable stir-fry!
