What To Make With What’s On Sale: Sweet Corn

Corn on the cob is a good price this week, finally!  Sweet corn has been ripening slower than normal this season, so the harvest is coming in late.  But, Safeway has yellow or bi-color corn for $0.20 each this week, and at Albertson’s, Olathe corn is $0.20 each.  Sunflower Market also has corn for $0.20 each, and King Soopers has Olathe “sweet sweet” corn for $0.25 each.  (Which variety is your favorite, or do you think it makes a difference at all?)

Sweet corn is a great summertime food, perfect for the grill!  There are lots of other ways to use sweet corn too.  Here are some ideas!

Here is a great basic method for boiling ears of corn.  The recipe calls for a short cooking time, which prevents the corn from becoming chewy or tough.

If you’d like to avoid all those kernels in your teeth, try Ina Garten’s Sauteed Fresh Corn recipe!  It’s simple and delicious as is, and you can also play around with different spices.  A little creole seasoning tastes great in sauteed corn!

For a tasty, cold side dish, try this Summer Corn Salad.  With only six ingredients it can be tossed together quickly.  This would be a great dish for a Labor Day barbecue!

This recipe for Corn Pancakes works for breakfast, lunch, or dinner, depending on what toppings you use for the pancakes.  (The author of the recipe has some tasty suggestions.)  They’re yummy all by themselves, too!

This side dish recipe, Summer Corn Pudding, looks amazing!  Try pairing it with grilled pork or chicken, or even as a brunch dish.

Cooks Illustrated has a great recipe for Corn Chowder made with fresh corn.  This version is lighter than most chowders and is seasoned with bacon and fresh herbs.
