Cucumbers are a refreshing snack by themselves, and they’re great for lots of summertime dishes. Here are some ideas for what to make with cucumbers!
Pickling is probably one of the most common ways to use cucumbers. This recipe, Homemade Refrigerator Pickles, is straightforward and uses simple ingredients. The onion and bell pepper can be omitted if desired.

You can also make a cool, crunchy salad with cucumbers. The variations on cucumber salad are endless, but here are two that look especially tasty: Mom’s Cucumber Salad (which uses a mayonnaise base — Kraft mayonnaise is as low as $1.49 this week at Safeway!) and Thai Cucumber Salad (which works well as a light main dish or as a side dish for grilled meat.)
Try another refreshing recipe — 5-star Cold Cucumber Soup from Emeril Lagasse. Here’s a preparation hint: all the fine chopping and mincing called for in the ingredient list isn’t really needed since everything is going in the blender! Coarse chopping is all that’s necessary and you’ll save yourself some time in the kitchen.

Have you ever had cucumber sandwiches? The typical cucumber sandwich uses simply bread, cream cheese, seasonings, and cucumbers. And here’s an interesting variation — Egg Salad & Cucumber Sandwiches. Yum!
Tzatziki is a traditional Mediterranean sauce that uses cucumbers and yogurt as its main ingredients. This Tzatziki recipe is easy and so delicious; try it as a dip for veggies or pita bread, or as a sauce for fish, lamb, grilled chicken, or gyros!
