Summer is coming, and I’m loving the the lower prices on produce! For this week’s What To Make With What’s On Sale post, we’re sharing ideas for how to use fresh tomatoes. Sunflower Market has on-the-vine cluster tomatoes for $0.88/lb, and organic hothouse tomatoes for $1.50/lb!
One of my family’s favorite ways to eat fresh tomatoes is simply sliced with a sprinkling of sea salt. Here are five more delicious ways to use fresh tomatoes!
This recipe, Tomato and Avocado Salad, is so simple and makes a great summer side dish. (Avocados are cheap this week at Sunflower Market too — both the conventional and organic varieties are $0.77 each!)

This Quick Mango Salsa is another easy recipe with just a few ingredients. It’s good with chips or crackers, and it can also be used as a topping for grilled chicken or fish!
If you need a yummy summer salad, you can’t go wrong with Ina Garten’s Tomato Feta Pasta Salad! (You can cut back on the sun-dried tomatoes if you’d like it a bit less tart.)
Gazpacho, a tomato-based chilled soup, is perfect for the warmer months. It’s best if it’s allowed to chill overnight. (The recipe doesn’t call for cilantro, but it’s an essential ingredient, in my opinion!)

Here’s a hot dish, cheesy Tomato Pie, that works for any meal of the day. Fresh chopped tomatoes, onions, basil and grated cheese are baked together in a pie crust. The recipe author describes it as “pizza meets cheesy bread!”
