It’s Friday — time for What To Make With What’s On Sale! Boneless, skinless chicken thighs are a great price this weekend at Sprouts — $1.59/lb, Friday through Sunday only.
The dark meat of chicken thighs means they’re juicier and more flavorful than breast meat, and the fact that they’re skinless and boneless makes them just as easy to use as chicken breast. Here are six recipe ideas for cooking with chicken thighs!
This Family Friendly Fricasee is a creamy, lemony, French-inspired dish made with chicken, veggies, white wine, cream, and lots of herbs. It’s great served over noodles, rice, or mashed potatoes.
Here’s a 5-star recipe that would be good for a weeknight meal — Teriyaki Chicken Thighs. The chicken can be marinated in the morning so it’s ready to cook at dinnertime. Many reviewers mentioned that they doubled the amount of sauce and used half for marinating and half for serving. Also, consider baking the chicken for 30 minutes at 350 degrees, then broiling for the last few minutes to prevent overcooking the outside before the inside is cooked through.

Chicken Tikka Masala is one of my family’s favorite chicken dishes. It’s rich and flavorful without being too spicy for the kids! This recipe calls for chicken breast, but I prefer to use thighs. During the colder months, I brown the chicken in butter on the stovetop rather than using the grill.
The Pioneer Woman’s Linguine with Chicken Thighs is a fairly easy but very tasty recipe. The chicken is diced and cooked, then added to a simple homemade marinara and served over pasta.
These Stuffed Chicken Thighs are made with an herbed apple-onion breadcrumb mixture. If you like the idea of this recipe but don’t want to mess with pounding and stuffing and rolling, try this: brown the seasoned thighs on each side in a skillet, place them on top of the stuffing mixture in a roasting pan, and bake them (covered) for 20 minutes. Remove the foil and bake 15 minutes more.
This recipe for Homemade Chicken Nuggets looks good, and there are gluten-free ingredient recommendations if you need them! Rather than deep frying, these nuggets are cooked in a relatively small amount of fat.
