Pork loin roast has the potential to be moist and flavorful when cooked, but if it’s prepared improperly, it can end up tough and dry. Here are some tips and tricks for preparing a juicy pork loin roast!
Choosing a pork loin roast
When looking for the best roast at the grocery store, try to find one that still has the fat layer on top. You might even want to ask the butcher if they have a roast with the fat layer, because this gives the roast more flavor and helps retain moisture.
Preparing a pork loin roast
Allow the roast to sit on the counter (covered) for at least 30 minutes before cooking it. This will help the roast to cook more evenly.
Season the roast liberally. As far as pork loin roast goes, the more seasonings, the better! Alternately, you can brine the roast for 10-12 hours before cooking. Brining is a great way to prepare a pork loin roast because it hydrates the cells of the meat and guarantees a moist and juicy result!
Brown the meat on all sides in a hot skillet. Use tongs (rather than a fork, which will poke holes and allow moisture to escape) to gently turn the roast. Browning the outside of the roast will help to seal in the juices.
Baking a pork loin roast
If desired, add more seasonings just before cooking. Mustard, balsamic vinegar, honey, brown sugar, and fruit preserves all pair well with the mild flavor of pork roast.
Place the roast in a baking pan with sides. If you have one, insert a meat thermometer into the thickest part of the roast. Bake in a preheated oven at 375 degrees.
When the temperature has reached approximately 155 F (anywhere from 45 minutes to 2 hours, depending on the size of the roast) take it out of the oven and allow to rest for 15 minutes. Do not remove the thermometer!! Resting the meat will allow the juices to reabsorb and keep the roast moist.
