How To Prepare What’s On Sale: Pumpkin

It’s time for How To Prepare What’s On Sale!  This week at King Soopers, Simple Truth organic canned pumpkin is just $1.00 (15 oz can.)

I absolutely love pumpkin season and always stock up on both canned pumpkin and whole pie pumpkins for cooking and baking.  The possibilities with pumpkin are endless!  If you’re not already sick of all things pumpkin, here are some of my favorite pumpkin tips and recipes!

Lots of pumpkin recipes call for a partial can of pumpkin, leaving you with a small amount that could easily end up getting tossed.  Try using that leftover pumpkin mixed into plain or vanilla yogurt, or stir a spoonful into cooked oatmeal and add a dash of pumpkin pie spice.

Pumpkin puree can also be frozen for later use.  Store it in a freezer-safe bag and be sure to remove as much air as possible.  Frozen pumpkin will last up to a year in the freezer.

If you’re needing a breakfast idea, try these scrumptious Pumpkin Cinnamon Streusel Pancakes.  The cinnamon streusel topping is cooked right into the pancakes!

This DIY recipe for a Pumpkin Spice Latte only requires two tablespoons of pumpkin per serving, so it’s a great way to use up leftover pumpkin puree!  If you want the results to be as close as possible to a coffeehouse latte, be sure to include the step of blending the mixture or using a whisk to make it frothy.

One of our lunchtime staples in the colder months is this Pumpkin Tomato Soup.  The pumpkin-tomato combination is surprisingly delicious.

Another simple and savory pumpkin dish is this Bowties with Creamy Pumpkin and Parmesan.  (American Beauty pasta is $0.49 as part of the Mega Event at King Soopers this week!)  The recipe has five ingredients and is just as easy as making macaroni and cheese!

This Pumpkin Date Bundt Cake with cinnamon cream cheese icing is great with whatever add-ins you prefer — dates, chocolate chips, nuts, dried cranberries, or nothing at all!

Here’s another yummy dessert recipe, Pumpkin Dump Cake.  This cake is easy to throw together and is sure to be a hit at Thanksgiving get-togethers (especially for those who are desperate for alternatives to the ubiquitous pumpkin pie!)
