Freddy’s Frozen Custard & Steakburgers is working on a location at Falcon Marketplace – the northwest corner of Woodmen and Meridian.

Nestled just off North Academy Boulevard, Freddy’s is a beacon for those craving a dash of nostalgia coupled with a modern twist. Stepping inside, the 50s diner ambiance transported me back to an era where Elvis crooned on the radio and jukeboxes were the pride of every eatery. The cherry-red booths, the checkerboard tiles, and the hum of cheerful chatter created an atmosphere of comforting familiarity.

Now, for the main attraction: the food. Oh, where do I begin? With a name like Freddy’s, you’d expect their steakburgers to steal the show, and oh boy, do they! Cooked to perfection and layered with fresh ingredients, the steakburger is an embodiment of love at first bite. But the secret star for me was their signature seasoning – a perfect blend that kicks up the flavor just a notch without overpowering the authentic taste of the beef.

As I left, the blend of satisfied customers – families with kids licking the remnants of custard from their spoons, couples sharing a shake, and solo adventurers like me – made me realize that Freddy’s isn’t just about the food. A Vietnamese-style sandwich and pastry shop is slated to open on January 8th, according to the owner. An address or website was not provided.

Stepping in, the welcoming aroma of freshly baked baguettes and the sizzle of grilled meats embraced me. The blend of traditional Vietnamese flavors with a modern twist promised an unparalleled sandwich experience, the likes of which Colorado Springs had never tasted before.

As I sat by their window, gazing out at the Springs with my Vietnamese iced coffee in hand (a perfect blend of robust coffee and sweet condensed milk), I was transported. It felt as if the vibrant streets of Saigon and the tranquil beauty of Colorado Springs converged at that very moment, right in the heart of Lee’s Sandwiches.

Before I left, the manager, Lily, shared stories of their family recipes, passed down through generations and now made available for the Springs’ residents. It wasn’t just the taste but the tales behind each dish that added depth to the dining experience.

A toast and juice bar franchise will open on the northwest corner of Voyager and Ridgeline Drive, next to Something New bridal boutique.

Being a creature of habit, I usually opt for the classic avocado on toast. But a quick glance at their menu and I was caught in a whirlwind of choices. From the “Berry Bliss” with its fresh berries, honey drizzle, and almond butter, to the “Savory Sunrise” topped with smoked salmon, capers, and a sprinkle of dill – this was no ordinary toast menu.

Although their food is a bit pricier, it wasn’t just about the food (though that certainly was a highlight), but the overall experience. Toastique had managed to turn the simple act of eating toast into an event, a morning ritual to savor and look forward to.

TATTERED COVER BOOKSTORE

Denver’s Tattered Cover bookstore will open a Colorado Springs location in the former Zeezo’s costume shop space on N. Tejon. The store told the Gazette to expect an opening in mid-February to mid-March.

Its name might imply wear and tear, but what I found inside was nothing short of magic. I was instantly transported into a bibliophile’s haven – a labyrinth of carefully curated books, with creaking wooden floors beneath and the soft glow of ambient lighting above.

On this particular day, a gentle rain was drizzling outside, making the ambiance inside even cozier. The subtle aroma of fresh pages mingled with a hint of coffee, wafting from their in-house café. It’s the kind of place that whispers, urging you to take a pause from the world outside. Tattered Cover Bookstore was more than just a pit stop; it was a chapter in my Colorado Springs story.

DUTCH BROS

A Dutch Bros coffee kiosk is being planned for the Falcon Marketplace shopping center on the northwest corner of Woodmen and Meridian in Falcon. The seductive scent of freshly brewed coffee mixed with a hint of hazelnut and vanilla. It beckoned, it called, and like a moth to a flame, I found myself standing in line at the newest Dutch Bros outpost in Colorado Springs.

Whether you’re a die-hard coffee aficionado or someone who just needs a break from the daily grind, give Dutch Bros a shot (pun intended). And who knows? Maybe I’ll see you there – I’ll be the one with the Rebel in hand, always ready for the next tasty adventure.

Dutch Bros has 4 LOCATIONS! So there’s plenty to choose from.

Colorado Springs’ seventh Dutch Bros. will be located between the Taco Bell and Dion’s Pizza at the Powers and Dublin intersection. This location is slated to open on September 26th.

Another Dutch Bros is nearing completion in the former Taco Bueno building on N. Academy. This location will have an indoor seating area and is planning to open October 11th.

A kiosk on the northeast corner of Platte and Murray is nearing completion as of November 1, 2019.

Sprouts will open another Colorado Springs location in the new Creekwalk/Creekwalk North shopping center going in on Nevada and Ramona. A projected opening date is not expected to be announced until 2022, so it seems that a likely opening date is at least in late 2022.

Service at SPROUTS was impeccable. The staff, just as passionate about the concept as the chefs, ensured every guest felt valued and informed. They were more than eager to share stories behind each dish, giving a deeper appreciation for the culinary journey we were on.

MICI HANDCRAFTED ITALIAN

A reader is reported that a second location for Mici handcrafted Italian is going in at Union and Briargate Blvd.

Can love truly be found in a plate of spaghetti? Their handmade pasta. I opted for the Tagliatelle al Ragu. The pasta was silken, and the sauce? Rich, meaty, and so robust that I wanted to sing praises to the culinary gods.

Their pizza – a true masterpiece. A delicate balance of crispy and chewy crust, topped with the freshest of ingredients. As I sipped on a glass of their house red, perfectly aerated and served at just the right temperature, I chatted with the affable owner. To my delight, I learned that MICI isn’t just a name – it’s a legacy, a tradition of crafting food with love and passion.

Sasquatch Cookies will open a location as part of the new Red Leg Brewing Company site on Garden of the Gods Road, just east of 30th Street. Other food options joining will be TacoQ, PH Burger Bunker Bar, and Nekter Juice Bar.

The cookie menu, written on a chalkboard, offered a variety of flavors, from the classic chocolate chip to the intriguing Rocky Mountain mint. However, one in particular caught my eye – “The Bigfoot Special.” A fusion of dark chocolate, walnuts, cranberries, and a hint of local honey. I couldn’t resist.

Locally-owned Oliver’s Deli will open a second location in a shipping container next to the also-coming-soon Red Leg Brewing Company.

Upon my first visit, I was greeted by the intoxicating aroma of freshly baked bread, a scent so authentic and comforting that for a fleeting moment, I felt transported to the streets of a charming European town. Handwritten chalkboard menus showcased an impressive array of sandwiches, salads, and soups, each more tempting than the last.

THE HUMAN BEAN

The Human Bean coffee stand will open their first Colorado Springs location on the southeast corner of Academy and North Carefree, in front of the old Safeway store.

On the barista’s recommendation, I tried their signature “Rocky Mountain Mocha”. And oh, was it a treat! Creamy, with just the right balance of cocoa and coffee, topped with a sprinkle of what I swear were mountain-grown spices (I might be exaggerating, but let me have my moment).

And can we talk about their pastries? Soft, crumbly, with the delicate aroma of lavender making every bite feel like springtime.

AMY’S DONUTS

Amy’s Donuts plans to open their second Colorado Springs location in January 2022, on the northwest corner of Powers and N. Carefree.

Now, you know I’ve been around the block, sampling pastries, cakes, and, yes, donuts, from countless places. But as I approached the colorful exterior of Amy’s Donuts, something whispered that this was going to be different. Located snugly on the corner of Fountain and Chelton, its vibrant storefront boasts a mural that’s reminiscent of a child’s dreamland. Colorful, enticing, and promising of adventures to come.

FIVE BELOW

A reader reports that a sign indicating a Five Below store will be going in on the northeast corner of Woodmen and Academy, possibly in the former Party City space. A projected opening date was unavailable as of late July.

IN-N-OUT BURGER

Update: In-N-Out’s second location, at Powers and Constitution, is now under construction.

No opening date is set as of September 2020, but In-N-Out’s first location on the corner of Interquest and Voyager looks like it’s on track to open in November. They have announced plans for a second location on the northeast corner of Powers and Constitution, on the site that currently houses a shuttered Outback Steakhouse.

Those fries, crispy on the outside and tender on the inside, especially when paired with that signature In-N-Out spread, made me question every life choice I’d made that hadn’t led me to this moment sooner.

SLIM CHICKENS

Slim Chickens will open another location in the Colorado Springs area: the Falcon Marketplace shopping center that’s under construction on the northwest corner of Falcon and Meridian will house their second area restaurant, with the projected opening in February or March 2022.

Krispy Kreme is planning to take over the site of the former Village Inn on the northwest corner of Powers and N. Carefree.

I remember pulling into the parking lot, the iconic red and green neon sign beckoning. The “Hot Now” light was on, and for those in the know, that’s the universal bat-signal for “Get ready for a treat!”

With a dozen of their Original Glazed in tow (because who stops at just one?), I found a quiet corner. The first bite? Pure bliss. The doughnut was warm, the glaze perfectly crispy, and it melted in my mouth – a symphony of textures and flavors. It was simple, yet so profoundly satisfying.

Chick-fil-A is planning a new location at the site of the current Casual Male XL building near Lowe’s on the northeast corner of Platte and Academy.

The sandwich itself was a masterpiece – tender, juicy chicken with that unmistakable crispy coating, lovingly held within a toasted, buttered bun. Topped with two pickle slices, it was simplicity at its best. I often find myself returning, not just for the taste, but for the comfort it offers.

Housing nine restaurants and two bars, City Works Eatery plans to open in early April 2021, according to the Gazette. Restaurants included are Big City Deli, Roll It Up, Fresh Twist, Macout, Crispy Chic, Bol, North Shore Tacos, 5-Star BBQ, and Sam’s Ice Cream and Candy Shop. The building is also the new home of the Rocky Mountain Motorcycle Museum.

BIRDCALL RESTAURANT

A new Habitat ReStore is being constructed on Tutt Blvd, just south of Dublin, according to a sign posted on the site. No word on when it will open as of October 2020.

I decided to venture out to a place I’ve heard so much about but had never explored: the Habitat ReStore. I’ve always had a soft spot for sustainability, and the idea of repurposing and giving items a second chance always warmed my heart. Plus, the buzz around town was that this wasn’t just any store.

The best part about my shopping adventure? Chatting with the friendly staff. They shared that the proceeds from the store go towards building homes for those in need right here in Colorado Springs. Every item purchased, every dollar spent, contributes to a better, united, and sustainable Colorado Springs.

ZIGGI’S COFFEE

Update: According to the Gazette, these locations will likely open sometime in January or February 2021. There are also potential plans for a third location at Rockrimmon Blvd. and Pro Rodeo Drive, in the building that formerly housed a bank.

Ziggi’s Coffee comes to Colorado Springs with two locations: the northwest corner of Dublin & Marksheffel and the northeast corner of Briargate Pkwy & Chapel Hills. Both will offer dine-in and drive-thru. An opening date has not been announced but based on construction status, perhaps they’ll be open in late 2020.

First Watch will open another Colorado Springs location near Chipotle and Hops N Drops in the Victory Ridge shopping center at Interquest and Voyager.

My server, a bubbly young woman named Jenna, recommended the ‘Farmhouse Hash. When the dish arrived, it was art on a plate – perfectly diced potatoes, seasoned with love and care, topped with avocado, eggs sunny side up (with yolks just begging to be broken), and a medley of farm-fresh veggies. I’ve been on my fair share of bikes over the years, from old rusty rides to sleek city commuters, but my recent experience with ASCENT CYCLING has me absolutely spinning with excitement.
